Benefits of the Mediterranean diet & one Paella recipe

We invite you to try our very tasty Paella recipe

The famous Mediterranean diet is undoubtedly known worldwide: A diet of primarily plant-based foods, such as whole grains, vegetables, legumes, fruits, fish and olive oil as the star that helps fight obesity and provides interesting benefits to our cardiovascular health.

To whet your appetite, we invite you to start with paella: A traditional Valencian dish consisting of rice, vegetables from the garden, chicken and garrafones - white beans typical of the region. Although, if you you cannot find them, you can replace them with large white beans.

Ingredients:
· 400 grams of round rice
· 500 grams of chicken
· 100 grams of green beans
· 100 grams of garrafón, (White Beans)
· 100 grams of chopped or crushed natural tomatoes
· 1 teaspoon of sweet paprika
· 1 teaspoon of coloring · 4 strands of saffron
· 1 sprig of rosemary
· 1½ liters of water
· 1 dash of oil · 1 pinch of salt

1. Clean and cut the chicken and rabbit into pieces.
2. Salt the meat to taste and sauté in paellera (two-handled frying pan) with olive oil. (OLIVE PLEASE!)
3. Wash the green beans, cut off the ends, chop them, and add them together with the white beans (if they were dried, you should leave them to soak the night before). 4. Add the chopped natural tomatoes and stir for five minutes over medium heat. Add the sweet paprika and stir well. 5. Add the water (about 1.5 liters, or a little more because it will cook down). Add a little salt and let the meat cook for another 15 minutes.
6. Add the saffron, rosemary branch, and rice (you should add twice as much water as rice), spread it well so as to not touch it during cooking.
7. Cook for 5-8 minutes over high heat.
8. Reduce heat to medium and let the rice continue cooking for about 10 more minutes, then let it rest for 5 minutes.
9. Enjoy!
